Swiss Chard with Leeks and Shiitakes


  • 1 leek (6-8 oz.)
  • 8 ounces fresh shiitake mushrooms
  • ¼-½ teaspoon hot chile flakes, if desired
  • 2 bunches (2 lb. total) Swiss chard
  • 3 tablespoons olive oil
  • 3 cloves garlic, peeled and chopped
  • 2 tablespoons plus 1/2 teaspoon salt

1. In a 6- to 8-quart pan over high heat, bring 3 quarts water to a boil. Meanwhile, rinse chard and remove stems and ribs. Add 2 tablespoons salt and the chard leaves to boiling water.
