Tabbouleh Salad

Ingredients

  • ¼ teaspoon(s) cumin
  • salt to taste
  • ½ teaspoon(s) black pepper
  • juice of one lemon
  • 3 tablespoon(s) olive oil
  • 1 ½ cup(s) diced tomatoes (fresh or canned)
  • ¼ cup(s) fresh mint, finely chopped

    • 1 cup(s) fresh parsley, finely chopped
    • 2 ½ cup(s) boiling water
    • 1 cup(s) medium grind bulgur wheat

In a medium saucepan, pour about 2-1/2 cups of boiling water over 1 cup of medium grind bulgur wheat. Cover the pan and leave it for about 30 minutes.
