Ingredients

  • ½ cup unsweetened tamarind paste
  • 2 tablespoons cracked coriander seeds
  • ½ cup fresh orange juice
  • 2 pounds boneless leg of lamb or 4 pounds lamb shoulder chops, fat trimmed
  • 2 tablespoons golden brown sugar
  • 2 tablespoons red jalapeño chilies
  • 1/3 cup fresh cilantro
  • + 7 more ingredients
    • 6 tablespoons fresh lemon juice
    • 2 cups dried apricots
    • 1 teaspoon dried crushed red pepper
    • 1/3 cup mild-flavored (light) molasses
    • 3 tablespoons fresh lime juice
    • 1 large red onion
    • 20 12-inch metal skewers

Bring first 4 ingredients to boil in small saucepan over high heat. Reduce heat and simmer until reduced to 1 cup, stirring occasionally, about 8 minutes. Remove from heat. Stir in lime juice.
