Ingredients

  • ¾ cup dark corn syrup
  • ½ teaspoon salt
  • ¼ cup sugar
  • 1 tangerine
  • 2 tablespoons sugar
  • 12 tablespoons unsalted butter
  • 4 tablespoons unsalted butter

    • 1 teaspoon finely grated tangerine peel
    • 2 large egg yolks
    • ¾ cup heavy whipping cream
    • 6 Medjool dates
    • 3 tablespoons water
    • 1 tablespoon sugar
    • 2 large eggs
    • ¼ teaspoon coarse kosher salt
    • ¼ cup fresh tangerine juice
    • ¼ cup buttermilk
    • 1 large egg white
    • 2 tablespoons brandy
    • 1 ½ cups all purpose flour
    • 2 cups water

Combine 2 cups boiling water, tangerine, and dates in bowl. Cover; chill overnight. Drain dates. Peel each and quarter lengthwise. Blend flour, sugar, and salt in processor.
