Tangy Tomatillo Salad with Sun-Dried Tomatoes

Ingredients

  • 1 cup(s) loosely packed drained oil-packed sun-dried tomatoes
  • 2 teaspoon(s) finely chopped peeled fresh ginger
  • 0.3333 cup(s) coarsely chopped cilantro
  • 1.5 pound(s) large tomatillos-husked
  • 1 large jalapeño
  • 2 teaspoon(s) finely chopped garlic
  • 3 tablespoon(s) extra-virgin olive oil
  • + 2 more ingredients
    • 3 tablespoon(s) fresh lemon juice
    • Salt and freshly ground pepper

Pat the sun-dried tomatoes with paper towels and coarsely chop them. Transfer to a large bowl and add the tomatillos, jalapeño, ginger, garlic, olive oil and lemon juice and toss gently.
