Tart Lemon Sauce

Ingredients

  • 1 tablespoon plus 2 teaspoons all-purpose flour
  • 1 tablespoon grated lemon rind
  • 3 tablespoons lemon juice
  • 1 cup sugar
  • 3 tablespoons lemon juice
  • ¼ teaspoon salt
  • 1 tablespoon grated lemon rind

    • 1 tablespoon butter or margarine
    • 1 cup water
    • 1 tablespoon plus 2 teaspoons all-purpose flour
    • ¼ teaspoon salt

Combine sugar, flour, and salt in a small heavy saucepan; add water, stirring until mixture is smooth. Bring mixture to a boil; cook 3 minutes, stirring frequently. Remove from heat; add butter, grated lemon rind, and lemon juice, stirring until butter melts. Serve warm over pudding or gingerbread.
