Tartly Frosted Lemon Squares


  • 1 (3 1/2-ounce) can flake coconut
  • 2 eggs, separated
  • 1 can eagle brand milk
  • 1/3 c fresh lemon juice
  • ¼ c butter, melted
  • ¼ c flour
  • ½ t salt
  • + 4 more ingredients
    • Frosting:
    • 1 c confectioners' sugar
    • 2 T butter, melted
    • 1 T lemon juice

Preheat oven to 350F. Pat coconut on bottom of 9x9 baking dish and set aside. In a large mixing bowl beat egg yolks, stir in milk, lemon juice and butter. Beat until smooth. Stir in flour and salt.
