Tequila-Marinated Beef-and-Pepper Fajitas
Ingredients
- 1 green bell pepper, cut into 4 wedges
- 4 (8-inch) fat-free flour tortillas
- 2 garlic cloves, minced
- 1 red bell pepper, cut into 4 wedges
- 4 (1/4-inch-thick) slices red onion
- Cooking spray
- ¼ cup tequila

- ¼ teaspoon ground red pepper
- 2 tablespoons chopped fresh cilantro
- ¼ teaspoon salt
- ½ teaspoon vegetable oil
- 1 tablespoon Worcestershire sauce
- 2 tablespoons fresh lime juice
- ¼ teaspoon black pepper
- 1 teaspoon ground cumin
Combine first 9 ingredients in a large zip-top plastic bag. Seal and marinate in refrigerator 1 hour. Remove steak from bag; discard marinade. Sprinkle bell peppers and onion with salt and pepper.
