Terra Cotta Wrap


  • 1 (9-inch) whole-grain tortilla
  • 2 t low-fat cream cheese, softened
  • 2 leaves green or red leaf lettuce
  • ½ ripe medium avocado, lightly mashed and squeezed of lemon or lime
  • 3 thin red bell pepper rings, cut in half
  • ¼ c shredded monterey jack or cheddar chesse
  • ¼ c canned black beans, rinsed and drained well

Place the tortilla flat on a work surface. Spread with cream cheese. Place lettuce leaves over cheese. Spread with avocado. Top with red peppers, cheese and black beans. Roll firmly but not so tightly that the tortilla skin breaks. Cut in half and wrap well.
