Thai sweet potato pudding

Ingredients

  • 1 cup thick coconut cream
  • ¼ cup maple syrup
  • ½ cup egg substitue (the equivalent of 2 eggs..I use applesauce ¼ c. per egg)
  • 2 teaspoons pumpkin pie spice
  • 2 sweet potatoes (wrapped and baked in oven for 45 minutes at 350 degrees)
