Thai Tofu Salad

Ingredients

• Dressing:
• 1 T soy sauc
• 6 T fresh lime juice (from about 3 limes)
• 1 t sugar (preferably palm sugar)
• 1 to 3 Thai bird chiles or serrano chiles, seeds and ribs removed and very thinly sliced
• ½ c thinly sliced shallots (preferably the large red variety)
• Kosher salt

• • Salad:
  • ¼ c vegetable oil
  • 1 lb extra-firm tofu, cut into 3/8-inch thick slabs
  • Kosher salt
  • Freshly ground black pepper
  • 1 c medium-diced seedless English cucumber
  • 4 scallions, white and light green parts, cut into small bite-sized lengths
  • ½ c lightly packed cilantro leaves, plus additional for garnish
  • 2 T minced fresh mint leaves

For the dressing: Combine the soy sauce, lime juice, sugar, chiles, and shallots in a salad bowl. Taste and add salt as needed, and adjust other components to get a good balance of flavors. It should be very intense; it will seem much more mild when tossed with the salad. For the salad: Put th...
