Thai Tofu Satay (Vegetarian/Vegan)

Ingredients

  • ½ to 1 package firm tofu (approx. 12 oz./350 g)
  • 3 Tbsp. regular soy sauce
  • 6 Tbsp. brown sugar
  • 3 Tbsp. vegetable oil
  • salt to taste
  • 1 red bell pepper
  • ½ purple onion OR yellow cooking onion, sliced into wedges for skewering
  • + 11 more ingredients
    • optional: 2 Tbsp. sesame seeds
    • SATAY MARINADE:
    • ¼ cup minced lemongrass, fresh or frozen-prepared
    • 2 shallots OR ¼ cup purple onion, sliced
    • 3-4 cloves garlic
    • 1-2 fresh red chilies, OR ½ to ¾ tsp. cayenne pepper
    • 1 thumb-size piece galangal OR ginger, sliced
    • ½ tsp. turmeric
    • 2 Tbsp. ground coriander
    • 2 tsp. ground cumin
    • 2 Tbsp. dark soy sauce
