  • ¾ teaspoon table salt
  • 1 package active dry yeast
  • 1 ¼ teaspoons medium-grain sel gris or fleur de sel, or kosher salt (see Notes)
  • About 2 ¾ cups flour, divided
  • 1 teaspoon freshly ground coarse black pepper
  • 2 tablespoons olive oil
  • 1 to 2 tbsp. beaten egg (from 1 large egg)
