Ingredients

  • 1 cup grated Parmigiano-Reggiano
  • 3 tablespoons unsalted butter
  • 1 ½ cups coarsely grated extra-sharp Cheddar
  • 1 teaspoon salt
  • 9 large eggs
  • 1 cup whole-milk ricotta
  • 6 tablespoons all-purpose flour
