  • 2 tablespoons butter
  • ½ cup (4 oz.) shredded white Cheddar cheese
  • Pinch of ground nutmeg
  • ¼ cup grated Parmesan cheese
  • ¼ teaspoon pepper

    • 2 tablespoons flour
    • 1 cup (8 oz.) shredded Gruyère cheese, divided*
