  • 4 tsp. garam masala
  • ½ to 1 tsp. cayenne pepper
  • ¼ cup granulated sugar
  • 1 large egg white, beaten slightly
  • 4 cups unsalted cashews (about 1-¼ lb.)
  • 1-½ tsp. kosher salt
