Tomato and Bread Salad with Red Onion

  • 1 small red onion
  • 1 cup fresh basil leaves
  • 2 pounds ripe plum tomatoes
  • 1/3 cup red wine vinegar
  • ½ cup extra-virgin olive oil
  • 8 ounces stale Italian bread
  • 8 cups water

Pour vinegar into small bowl. Gradually whisk in oil. Season vinaigrette to taste with salt and pepper. Place bread in large bowl. Pour in enough cold water (about 8 cups) to cover bread.
