Tomato Cucumber Mozzarella Salad

Ingredients

• 3 tomatoes, chopped (medium)
• 1 Cucumber, quartered and cut into ¼ inch slices
• 1 green pepper, chopped (Small)
• ¹/₃ cup(s) olive oil
• 2 tablespoon(s) red wine vinegar
• 1 teaspoon(s) sugar
• ½ teaspoon(s) Salt
• + 10 more ingredients
• • ½ teaspoon(s) dried oregano
  • ¼ teaspoon(s) pepper
  • SALAD
  • ¼ cup(s) thinly sliced Onions
  • 2 tablespoon(s) minced fresh Parsley (or ¼ Tablespoons dried)
  • 1 tablespoon(s) minced fresh Basil (or ¹/₃ of a Tablespoon dried)
  • 4 ounce(s) Fresh Mozzarella Cheese, cubed
  • 2 tablespoon(s) balsamic vinegar
  • DRESSING
  • 12 Pitted Greek Olives, sliced (optional)

In a large jar with a lid, mix the salad ingredients: Olive Oil, Red Wine, Balsamic, Sugar, Salt, Oregano and Pepper. Shake well.
