Tomato-Herb Mini Frittatas

Ingredients

  • 12 large eggs
  • 1 cup half-and-half
  • ½ teaspoon salt
  • ¼ teaspoon freshly ground pepper
  • 2 tablespoons chopped fresh chives
  • 1 tablespoon chopped fresh parsley
  • 1 teaspoon chopped fresh oregano
  • + 2 more ingredients
    • 1 pt. grape tomatoes, halved
    • 1 ½ cups (6 oz.) shredded Italian three-cheese blend

1. Preheat oven to 450°. Process first 4 ingredients in a blender until blended. Stir together chives and next 2 ingredients in a small bowl.
