Tomato "Sushi"
Ingredients
- 1 1 1/2-tablespoon ice cream/cookie scoop with a release lever
- 1 small onion
- Granulated sugar
- ¼ cup extra-virgin olive oil
- ¼ cup golden raisins
- 2 tablespoons light rum
- 1/3 cup sushi rice

- 3 pounds firm-ripe 2- to 3-inch tomatoes
- 3 garlic cloves
- 1 teaspoon fresh thyme
- 1 Turkish or 1/2 California bay leaf
- 1 teaspoon rice vinegar (not seasoned)
- ½ cup pine nuts
- 2 tablespoons fresh mint

Put oven rack in middle position and preheat oven to 300°F. Cut an X in bottom of each tomato with a sharp paring knife and blanch tomatoes together in a 3-quart saucepan of boiling water 10 seconds.
