Tomato "Sushi"

Ingredients

  • 1 1 1/2-tablespoon ice cream/cookie scoop with a release lever
  • 1 small onion
  • Granulated sugar
  • ¼ cup extra-virgin olive oil
  • ¼ cup golden raisins
  • 2 tablespoons light rum
  • 1/3 cup sushi rice

    • 3 pounds firm-ripe 2- to 3-inch tomatoes
    • 3 garlic cloves
    • 1 teaspoon fresh thyme
    • 1 Turkish or 1/2 California bay leaf
    • 1 teaspoon rice vinegar (not seasoned)
    • ½ cup pine nuts
    • 2 tablespoons fresh mint
    • Ground cumin
