Tomatoes in Spicy Yogurt Sauce

  • ¼ teaspoon cayenne
  • 2 serrano chiles, seeded and finely chopped
  • 8 ripe but firm tomatoes (about 2 lbs. total; see Notes)
  • 1 cup plain whole milk yogurt
  • Cilantro sprigs (optional)
  • 1 teaspoon vegetable oil
  • ¼ teaspoon turmeric
  • + 5 more ingredients
    • 2 teaspoons cumin seeds
    • 1 teaspoon brown mustard seeds
    • 6 cloves garlic, minced
    • 2 tablespoons butter, cut into small pieces
    • 1 teaspoon salt
