Ingredients

  • ¼ cup egg substitute or 1 large egg white
  • 1 large egg
  • Cooking spray
  • 2/3 cup sugar
  • ¾ teaspoon baking soda
  • ¼ cup vegetable oil
  • ½ teaspoon salt
  • + 3 more ingredients
    • 1 ¾ cups all-purpose flour
    • 1 cup mashed ripe banana (about 2 medium)
    • 1 ¼ teaspoons cream of tartar

Preheat oven to 350°. Combine first 5 ingredients in a large bowl; beat with a mixer at medium speed until smooth. Lightly spoon flour into dry measuring cups, and level with a knife.
