Tortellini-Cauliflower Toss

Ingredients

  • 1 (9-ounce) package fresh cheese tortellini, uncooked
  • 2 garlic cloves, minced
  • ½ teaspoon salt
  • 1 ½ tablespoons olive oil
  • ¾ cup diced red bell pepper
  • ½ teaspoon dried basil
  • ½ teaspoon dried oregano
  • + 4 more ingredients
    • 8 cups torn spinach
    • 4 cups small cauliflower florets
    • ½ teaspoon pepper
    • ¼ cup red wine vinegar

Combine first 7 ingredients in a small bowl; stir well with a wire whisk. Set aside. Cook tortellini in boiling water 5 minutes. Add cauliflower, and cook an additional 4 minutes. Drain and let cool.
