Ingredients

  • Unflavored vegetable oil for greasing the slab
  • 1-½ cups raw peanuts (Spanish or blanched)
  • ¾ cup light corn syrup
  • 2 Tbs. unsalted butter, softened
  • ½ cup water
  • 1 tsp. vanilla extract
  • 2 cups sugar
  • + 2 more ingredients
    • ½ tsp. salt
    • ¾ tsp. baking soda

Generously oil an 18-inch-square marble slab (or an inverted baking sheet) and a thin metal spatula. Sift the baking soda and salt onto a small sheet of waxed paper.
