Ingredients

  • 1 large red bell pepper
  • 1 red onion
  • 1 large yellow bell pepper
  • 2 tablespoons fresh oregano
  • 2 tablespoons olive oil
  • 4 medium zucchini (about 1 pound)
  • 1 large poblano chile
  • + 1 more ingredients
    • 1 tablespoon cumin seeds

Heat oil in large nonstick skillet over medium-high heat. Add next 5 ingredients; sauté until vegetables are slightly softened, about 5 minutes.
