Tuna Niçoise Sandwiches with Olive Mayonnaise

Ingredients

• 8 slices tomato
• ½ teaspoon coarsely ground pepper
• ¼ cup pitted kalamata olives, finely chopped
• ½ teaspoon anchovy paste
• 8 slices potato bread
• 1 (12-ounce) can solid white tuna, drained and flaked
• 1 cup loosely packed arugula or spinach leaves

  • 2 tablespoons olive oil
  • 2 hard-cooked eggs, chopped
