Ingredients

  • ¼ cup white vinegar
  • 1 tablespoon low-sodium soy sauce
  • 2 teaspoons minced jalapeño pepper
  • 2 tablespoons mirin (sweet rice wine)
  • 2 tablespoons minced peeled fresh ginger
  • ¼ teaspoon salt
  • 1 teaspoon fish sauce
  • + 14 more ingredients
    • 2 teaspoons minced shallots
    • 8 (8-inch) round sheets rice paper
    • 1 tablespoon fish sauce
    • 1 cup uncooked sushi rice or short-grain rice
    • Rolls:
    • 1 teaspoon minced jalapeño pepper
    • 1 ½ teaspoons minced shallots
    • 1 (1/2-pound) tuna steak
    • 2 cups trimmed watercress
    • 1 teaspoon sugar
    • 1 ¼ cups water
    • 1 teaspoon sugar
    • Sauce:
    • 1 tablespoon sugar

To prepare rolls, rinse the rice thoroughly in a sieve. Drain well. Bring 1 1/4 cups water to a boil in a medium saucepan; add rice.
