Tuna Zucchini Cakes Recipe

Ingredients

  • 2 tablespoons canola oil
  • 1 cup seasoned bread crumbs, divided
  • 1/8 teaspoon pepper
  • ½ teaspoon salt
  • 1 teaspoon lemon juice
  • 1/3 cup minced fresh parsley
  • 2 eggs, lightly beaten

    • 1 cup shredded zucchini
    • 1 can (6-½ ounces) light water-packed tuna, drained and flaked
    • 1 tablespoon butter
    • ½ cup finely chopped onion
