Twice-Baked Smoky Sweet Potatoes


  • ¼ teaspoon salt
  • ½ cup whipping cream, half-and-half, or milk
  • ¼ teaspoon smoked paprika
  • 1/8 teaspoon ground red pepper
  • 1/3 cup butter or margarine
  • 6 medium sweet potatoes (3 1/2 lb.)
  • ½ cup crushed amaretti cookies (about 4 cookies)
  • + 2 more ingredients
    • ¼ teaspoon smoked paprika
    • ¾ cup grated Parmigiano-Reggiano cheese

Scrub potatoes, and prick each potato once. Place on a baking sheet. Bake at 450° for 1 hour or until tender.
