Twice-Baked Smoky Sweet Potatoes
Ingredients
- ¾ cup grated Parmigiano-Reggiano cheese
- ¼ teaspoon smoked paprika
- ½ cup crushed amaretti cookies (about 4 cookies)
- 6 medium sweet potatoes (3 1/2 lb.)
- 1/3 cup butter or margarine
- 1/8 teaspoon ground red pepper
- ¼ teaspoon smoked paprika
- + 2 more ingredients

- ½ cup whipping cream, half-and-half, or milk
- ¼ teaspoon salt
Scrub potatoes, and prick each potato once. Place on a baking sheet. Bake at 450° for 1 hour or until tender.
