Ultimate Rice Salad


  • ¼ c vegetable oil
  • 2 T vinegar
  • 1 t salt
  • 1/8 t freshly ground pepper
  • 2 c cooked rice
  • 1 rib celery, chopped
  • 1 small onion, chopped
  • + 4 more ingredients
    • 1 bell pepper, chopped
    • ¼ c chopped fresh parsley
    • 1 ½ t Italian seaoning
    • 1/3 (1-pound) package frozen peas, blached
