  • 2 small red onions, chopped
  • 2 (10 oz.) packages frozen baby lima beans
  • 1 cup fresh or frozen corn kernels
  • ½ cup chopped basil
  • 3 large, ripe tomatoes, cored, seeded and chopped
  • Salt and pepper
  • ¼ cup vegetable oil
  • + 2 more ingredients
    • 3 ribs celery, chopped
    • ¼ cup cider vinegar

Cook lima beans in 1 cup boiling water for 10 minutes; rinse and drain. In skillet, heat oil over medium heat. Add celery and onions; cook for 4 minutes. Add lima beans, tomatoes, corn and vinegar; season with salt and pepper. Cook for 2 minutes. Toss with basil.
