Ingredients

  • 2 large unpeeled Gala or Golden Delicious apples, quartered and cored
  • 1/3 cup cornmeal
  • 2/3 cup brown sugar
  • 10 tablespoon unsalted butter
  • ½ cup sugar
  • 1 tablespoon vanilla extract
  • ¾ cup buttermilk
  • + 7 more ingredients
    • ½ teaspoon baking soda
    • ¼ teaspoon salt
    • Lightly sweetened whipped cream or vanilla ice cream (optional)
    • 2 eggs
    • 1 tablespoon lemon juice
    • 1 ¼ cups all-purpose flour
    • ½ teaspoon ground cinnamon

Cut each apple quarter lengthwise into 3 wedges. In a 10-inch cast-iron or nonstick skillet, over medium heat, melt 4 tablespoons of the butter.
