Ingredients

  • a 1 ½-inch round cookie cutter
  • 1 pound frozen all-butter puff pastry
  • 1 whole large egg
  • 2 pounds Golden Delicious apples
  • ½ vanilla bean, split lengthwise
  • 1 tablespoon cornstarch
  • 1/3 cup sugar

    • 1 ¼ cups whole milk
    • 3 tablespoons light corn syrup
    • 1 ½ tablespoon unsalted butter
    • 2 teaspoon water
    • 1 large egg yolk
    • 3 tablespoons unsalted butter
    • a 6-inch-diameter bowl or plate
    • 1 ½ tablespoons all-purpose flour
    • a 10-inch disposable pastry bag or sealable plastic bag
