Upside-Down Peanut-Butter Fig Bars

Ingredients

  • 4 oz. (½ cup) unsalted butter, softened
  • 1/3 cup tepid water
  • 1 cup granola (without fruit)
  • ¼ tsp. ground cinnamon
  • 8 oz. (about 1-2/3 cups) dried Mission figs
  • 2/3 cup packed light brown sugar
  • ¼ tsp. table salt
  • + 6 more ingredients
    • ½ tsp. baking soda
    • 5-¾ oz. (1-¼ cups) all-purpose flour
    • 2/3 cup chunky peanut butter
    • 1 large egg
    • ½ cup plus 2 Tbs. granulated sugar
    • ½ tsp. baking powder

Heat the oven to 325°F. Snip off the stem of each fig and cut each into quarters, lengthwise; put the figs in a medium bowl, cover with hot water, and soak for 20 minutes.
