Vanilla & Ginger Roasted Plum Compote

Ingredients
- 3 to 4 Tbs. granulated sugar
- 1 tsp. grated lemon zest
- 1 Tbs. rum, preferably dark
- Butter for the baking dish
- Vanilla ice cream for serving
- 1-½ tsp. pure vanilla extract
- 6 ripe but firm black or red plums
- + 3 more ingredients

- ½ tsp. grated fresh ginger
- Pinch salt
- 1 Tbs. fresh lemon juice
