  • 1 vanilla bean, split lengthwise and scraped (optional for vanilla flavoring)
  • ¾ cup(s) sugar
  • 1 ½ teaspoon(s) cinnamon
  • 2 ¼ cup(s) water
  • 14 ripe, firm apples (5 lbs such as Gala, Cortland, Macintosh, peeled, cored, and quartered

Combine all ingredients in a wide, heavy saucepan over medium heat.
