Vanilla Banana Bread


  • 1 c (2 sticks) butter, at room temperature
  • 1 ½ c light brown sugar
  • 3 eggs, lightly beaten
  • 5 large very ripe bananas, mashed
  • 1 ½ c all-purpose flour
  • ½ c whole-wheat flour
  • 2 t baking soda
  • + 4 more ingredients
    • ½ c chopped macadamia nuts
    • ½ vanilla bean, split and scraped
    • 2 T vanilla extract
    • Vegetable oil or butter, for greasing pans
