Ingredients

  • 4 teaspoons chopped pistachios
  • 2 tablespoons strawberry preserves
  • 3 large ripe peaches, peeled, pitted, and quartered
  • 1/3 cup sugar
  • 1 (3 1/2-inch) piece vanilla bean, split lengthwise
  • 1 (3 1/2-inch) piece vanilla bean, split lengthwise
  • 2 tablespoons strawberry preserves
  • + 5 more ingredients
    • 1 cup water
    • 4 teaspoons chopped pistachios
    • 1 cup water
    • 3 large ripe peaches, peeled, pitted, and quartered
    • 1/3 cup sugar

Combine the first 3 ingredients in a medium nonaluminum saucepan; bring to a boil. Reduce heat; add peaches, and simmer 7 minutes or until tender.
