Veal Chops with Fresh-Tomato Sauce

Ingredients

  • 4 veal loin chops, about 1 inch thick (about 3 pounds in all)
  • 2 cloves garlic, smashed
  • 5 ½ tablespoons olive oil
  • ¾ teaspoon salt
  • ½ teaspoon balsamic vinegar
  • ¼ cup red wine
  • 1 ¼ pounds vine-ripened tomatoes (about 4), chopped
  • + 2 more ingredients
    • Fresh-ground black pepper
    • 1 ½ tablespoons chopped mixed fresh herbs, such as parsley, basil, and chives
