Vegan Mushroom Gravy

Ingredients

• 1 tablespoon soy sauce
• 2 cups mushroom broth
• ¹/₃ cup all-purpose flour
• ¼ cup red wine
• 1 medium shallot, small dice
• 1 bay leaf
• Freshly ground black pepper

  • 4 ounces cremini mushrooms, stems trimmed and sliced ¼-inch thick
  • ¼ cup vegetable oil
  • 1 cup water
  • ½ ounce dried porcini mushrooms (about ½ cup)
