Vegetable Couscous Salad

Ingredients

  • ¼ cup sherry or balsamic vinegar
  • ½ cup (2 ounces) crumbled feta cheese
  • 2 cups chopped tomato
  • 1 (.6-ounce) envelope Italian dressing mix (such as Good Seasons)
  • 1 ½ cups water
  • Salad:
  • 1 tablespoon olive oil
  • + 7 more ingredients
    • ¼ cup chopped fresh parsley
    • 1/3 cup water
    • Dressing:
    • 2 cups chopped red bell pepper
    • 1 cup uncooked couscous
    • ¼ cup chopped pitted kalamata olives
    • ½ cup finely chopped green onions

Combine the first 4 ingredients in a jar. Cover tightly, and shake vigorously. Bring 1 1/2 cups water to a boil in a medium saucepan; gradually stir in couscous. Remove from heat.
