Vegetable Couscous with Black Olives
Ingredients
- 3 Kalamata or other brine-cured black olives
- ½ small zucchini
- 1 cup water
- 1 tablespoon fresh flat-leafed parsley leaves
- freshly ground black pepper
- 1 plum tomato
- 1 large garlic clove
- + 4 more ingredients

- 1 small onion
- 2/3 cup couscous
- 2 tablespoons extra-virgin olive oil
- ½ teaspoon salt
In a small saucepan bring water, salt, and 1 tablespoon oil to a boil and stir in couscous. Remove pan from heat and let couscous stand, covered, 5 minutes.
