Vegetable Couscous with Black Olives

Ingredients

  • 3 Kalamata or other brine-cured black olives
  • ½ small zucchini
  • 1 cup water
  • 1 tablespoon fresh flat-leafed parsley leaves
  • freshly ground black pepper
  • 1 plum tomato
  • 1 large garlic clove
  • + 4 more ingredients
    • 1 small onion
    • 2/3 cup couscous
    • 2 tablespoons extra-virgin olive oil
    • ½ teaspoon salt
