Vegetable Latkes
Ingredients
- 1 cup matzo meal
- 2 tablespoons sugar
- 2 teaspoons salt
- 1 cup broccoli
- ¾ cup carrot
- 1 cup zucchini
- ¾ cup onion

In a large bowl, combine matzo meal, salt, and sugar. Set aside. Separate egg whites and yolks. Beat egg yolks, and combine with water.
