  • 2 oz. (4 Tbs.) unsalted butter
  • Extra-virgin olive oil, for drizzling

  • 2 hard-cooked eggs, peeled and roughly chopped
  • 2 fresh thyme sprigs
  • Kosher salt and freshly ground black pepper
  • Thinly sliced scallion greens or chives, for garnish
