Ingredients

  • 2 tablespoons chopped green onions
  • 2 cups all-purpose flour
  • Filling:
  • 2 tablespoons peanut oil, divided
  • 4 cups diced shiitake mushroom caps (about 3/4 pound)
  • Cooking spray
  • ½ teaspoon salt

    • 24 lettuce leaves
    • ¼ cup low-sodium soy sauce
    • 2/3 cup water
    • ¼ teaspoon dark sesame oil
    • 2 teaspoons grated peeled fresh ginger
    • 1/3 cup rice vinegar
    • 3 garlic cloves, minced

    • Remaining ingredients:
    • Wrappers:
    • 2 tablespoons low-sodium soy sauce
    • 4 cups finely chopped green cabbage
    • ½ teaspoon crushed red pepper
    • 2 tablespoons mirin (sweet rice wine)
    • ¼ cup chopped green onions

To prepare sauce, combine first 4 ingredients; set aside. To prepare wrapper, lightly spoon flour into dry measuring cups; level with a knife. Combine flour and water in a bowl.
