Ingredients

  • 1 teaspoon lime zest
  • ¼ cup freshly squeezed lime juice
  • 3 tablespoons coarsely chopped fresh cilantro
  • 4 medium bell peppers (any color), halved lengthwise and seeded
  • 1 cup frozen black-eyed peas
  • ½ cup long-grain white rice
  • 1 ½ cups unsweetened coconut milk

    • 1 teaspoon dried thyme leaves
    • 1 medium tomato, seeded and cut into small dice

    • 2 cups thinly sliced scallions (about 12 medium scallions)
    • 2 cups medium-dice butternut squash
    • ¼ cup packed light brown sugar
    • 3 tablespoons vegetable oil
