  • 2 tablespoons unbleached all-purpose flour
  • 4 medium potatoes, preferably russet
  • ½ cup low-fat milk, rice milk, or soy milk
  • Salt
  • 1 medium onion
  • freshly ground black pepper
  • 1 cup broccoli
