Waldorf Slaw

Ingredients

  • 1 teaspoon grated lemon rind
  • ¼ teaspoon salt
  • 2 cups chopped Braeburn apple (about 1 large apple)
  • 1 (16-ounce) package cabbage-and-carrot coleslaw
  • ½ cup low-fat buttermilk
  • 2 tablespoons fresh lemon juice
  • 3 tablespoons chopped walnuts
  • + 4 more ingredients
    • 1/8 teaspoon freshly ground black pepper
    • ½ cup raisins
    • ½ cup low-fat mayonnaise
    • 1 cup chopped peeled Bartlett pear (about 1 pear)

Combine first 5 ingredients in a large bowl. Combine mayonnaise, buttermilk, rind, juice, salt, and pepper, stirring well with a whisk. Drizzle mayonnaise mixture over cabbage mixture, and toss to coat. Cover and refrigerate 30 minutes.
