Warm Fruit Gratin

Ingredients

  • 2 to 3 Tbs. Sauternes or other alcohol, such as Grand Marnier, Amaretto, Armagnac, dark rum, or framboise
  • 2 Tbs. cornstarch
  • 6 cups fresh berries or cut-up fruit (such as peaches, plums, or bananas), rinsed and thoroughly dried if necessary
  • ½ vanilla bean, split (or ¾ tsp. pure vanilla extract)
  • 2 large egg yolks
  • ¾ cup whipping cream
  • 1/3 cup granulated sugar
  • + 2 more ingredients
    • 1 large egg
    • 2/3 cup whole milk

In a small saucepan, bring the milk to a boil with the split vanilla bean, if using. Remove the pan from the heat, cover, and leave to infuse about 15 min.
