Ingredients

  • 2 cups French green lentils (13 oz), picked over and rinsed
  • 6 cups water
  • 1 California bay leaf or 2 Turkish
  • 1 teaspoon salt
  • 1 medium onion, finely chopped (1 cup)
  • 2 carrots, cut into ¼-inch dice (1 cup)
  • 2 celery ribs, cut into ¼-inch dice (1 cup)
